Well, honestly, I don’t know why I am posting this material here. You might think something like “Hey, now we are writing about fried eggs, come on!” But something just felt so right about this simple yet amazingly delicious dish that I decided to photograph it right after preparing.
Or maybe it was just a way for me to remember to enjoy simple things (or topping them with something special!).
So here we go. Boil any vegetable that you have in your fridge (here I used asparagus and beans). Then drop them into the pan, sprinkle with olive oil and add some eggs. Salt, pepper – as you wish.
What it made really special here was a spoon of black truffle. Please, don’t blame me for my “strange” addiction (or snobbism). And as a finishing touch – some grated cheese like Parmigiano Reggiano or Grana Padano. And that’s it! Serve it with rustic bread, white/red wine, water, juice or as you wish!
